Dae-bong-kam persimmons is the “gift of autumn”. They are large due to the adequate amount of sunlight. Grown in the regions of Young-dong, Sang-ju and Cheong-do, where the regional climatic conditions favour the growth of the persimmons.
This fruit has a high tannin content, which makes the immature fruit astringent and bitter, but the tannin levels reduced as the fruit matures. They must be completely ripened before consumption. When ripe, this fruit comprises thick pulpy jelly encased in a waxy thin-skinned shell with some black dots, these are natural signs of ripeness.
When you first get them, they will be hard and not ready to eat. They will soften with time, usually 1-5 days and you can then put them into the chiller to chill and enjoy it cold.
