Korean Plumcot - approx. 500g
A plumcot looks like plum, but taste like apricot. They have a slightly fuzzy, plum-coloured skin with a vibrant red flesh that's sweet and juicy. They are available in summer in July.
Plumcots, like other stone fruit, are best eaten when they are at their ripest. Its skin is smooth, pale amber, and so thin that it almost blends into the soft and meaty flesh, which is moist but not dripping. Plumcots have the shape, size, and enticing perfume of apricots, the acid-sugar balance of a yellow peach, and the plum's matured rich flavours.
Baked, roasted, sautéed, puréed, or cooked into jams and compotes are all options. Vanilla, nutmeg, tropical fruits, peaches, cherries, citrus, and chilli are among the complementary flavours. Pork, lamb, crudo-style fish and shellfish, basil, almonds, and blackberries are all good combinations. To store fresh plumcots, refrigerate ripe fruit for three to five days.
