Jeongnamjin NH Premium White Shiitake Mushrooms 백화고 & 흑화고 (80g /300g)
Premium Korean baek-hwa-go & heuk-hwa go (the highest grade of shiitake mushrooms) are produced in a pollution free and eco-friendly forest environment with optimal climate conditions in Jangheung. They are picked in the months of February - May and October - November. In Korea, these dried mushrooms are also highly prized because they contain more vitamin D than their fresh counterparts.
Baek-hwa-go are the highest grade of shiitake mushrooms. They are called "white flower mushrooms" in Korean because of the white cracks on the mushroom caps. The cracks intensify the fragrance an flavour of the mushroom and only appear on one in a thousand mushrooms. They develop in cold climate forests when there is low humidity and frost.
- Heuk-hwa-go meaning "black flower mushroom" in Korean, they have dark brown cracks on the mushroom cap. These develop when dew forms on the white cracks of baek-hwa-go and are also very rare.
Dried mushrooms should be soaked in cold water for 3-5 hours until soft to get the most flavour. Stems should be removed before use.
